Recipe: Butternut Squash & Wild Mushroom Stuffing
Ingredients:
- 2 tbsp olive oil
- 1/2 small onion, finely diced
- 4 cups cubed butternut squash
- 1 tbsp brown sugar
- 3-4 cups mixed mushrooms, sliced
- 2 cloves garlic, minced
- 2 tbsp fresh sage, chopped
- 2 tbsp fresh oregano, chopped
- 3 cups cubed sourdough bread, lightly toasted
- 1 cup vegetable stock
- Salt and pepper to taste
Instructions:
1. Preheat your oven to 375°F.
2. In a skillet, heat olive oil and sauté the onion until translucent. Add butternut squash and brown sugar, cooking until caramelized.
3. Toss in mushrooms, garlic, sage, and oregano, cooking until softened and fragrant.
4. In a large mixing bowl, combine the sautéed mixture with sourdough cubes. Add vegetable stock and mix until lightly moistened.
5. Season with salt and pepper, transfer to a greased baking dish, and bake for 30-35 minutes, or until golden and slightly crisp on top.
